The Story:
There are certain flavor combinations I love. Roasted Plum and Ginger. Sea Salt and Caramel. And Pistachio, Cardamom, and Orange. These muffins are actually based on a very special cake, but one that is so time-consuming and rich that it’s best left for the most special of special occasions. These muffins, however, are a nice compromise as they are easy to make and nearly guilt-free to eat.

1- all-purpose flour 2. baking powder 3. salt 4. granulated sugar 5. cardamom pods (or ground cardamom) 6. egg 7. unsweetened cashew milk 8. egg 9. canola oil 10. pistachios
Pistachio Orange Cardamom Muffins
adapted from raspberry eggplant and The Muffin Book
Ingredients:
1 3/4 cups all-purpose flour
2 teaspoons baking powder
1/4 teaspoon salt
1/3 cup sugar
1 egg, beaten (to make vegan, substitute one ripe, mashed banana)
3/4 cup cashew milk
juice and zest from one orange
1/4 cup canola oil, plus more for greasing
3/4 cup finely chopped pistachios
Directions:
Heat oven to 400 degrees F and grease muffin tins with oil three-fourths of the way up the sides of each. Chop pistachios and juice and zest orange.
In a mixing bowl, mix together dry ingredients- flour through sugar- make a well in the center, and set aside.
In a separate mixing bowl, beat egg, add in cashew milk, freshly squeezed orange juice, and canola oil. Add wet ingredients to dry stirring until just moistened, being careful not to overstir.
Add in orange zest and pistachios and fold gently until combined. Spoon batter into greased muffin tins, filling until two-thirds full.
Bake for 15 minutes or until butter knife or toothpick inserted in center comes out clean. Cool for 5 minutes, loosening edges with butter knife. Turn out after five minutes and serve warm or cool.
